The techniques they use are based on pre-industrial cooking techniques and are as pure and honest as possible. The products they use are all local if they can get them locally. They only use products that are in season and only if they cannot get the products from Dutch soil, simply because they do not grow here, they buy the products from abroad.
Here, they create an even balance between culinary, wine, music and service. These four essential elements of the concept receive equal attention and one is never inferior to the other. Almost everything they can produce, they produce themselves. The patisserie and bakery that Alex makes: By hand. From the beginning. The fermentation: they do it all. They believe that the only way to control quality is to leave as little as possible to chance. It is therefore not a suprise that they are included in the Guide Michelin 2022 edition.
